How does card processing work with a restaurant POS?
The POS and the payment device work together, so the amount comes from the check rather than being typed into a terminal beside it, and the day reconciles against the system that rang it. BizTracker uses LINGA for restaurants and bars, and which processing path a particular venue can use is confirmed for that venue rather than assumed — the processor, the device and the configuration are settled before anything is quoted.
The useful questions are about the service, not the sales pitch: what the server does when a table splits a check, what a bartender does with an open tab, and what the manager reconciles at close. Those are the things to watch in a demo, and they are how a payment setup is actually judged.

Can we run cash discount, surcharge or dual pricing at a restaurant?
Where it is supported. Whether a program can be set up for a venue depends on the processor and the specific program, on card-network requirements, and on the law and rules that apply where it trades. The merchant processing page covers what each one is.
What should we watch in a demo?
Ask to see a table split between two cards, a bar tab opened and closed, a tip handled the way your staff would handle it, and a manager reconciling the day. Watching those four is how a payment setup is judged.
Does the restaurant system run on Infinity?
No. Infinity is the retail platform; restaurants and bars run on LINGA, because tables, tabs, courses, kitchen routing and online ordering are different problems from shelf inventory.
